To crop a PDF, use the Crop Tool, Document> Crop Pages. To access the Crop Tool faster, use the keyboard shortcut, “Shift-Cmd/Control_T”

Be aware that cropping a PDF does not actually remove information from the PDF.  The “crop” can be un-done at anytime by opening the Crop Tool Dialog box, Document> Crop Pages.
